Wine Details - Cave Spring are one of the world's finest Ice Wine producers. Clusters were left to partially raisin on the vine during late autumn, with a further concentration of sugars and acids occurring when the berries were frozen solid by the onset of winter. Selectively hand-harvested and pressed at temperatures below -10ºC (14ºF), these grapes produced a sweet nectar with impeccable acid balance

Tasting Note - Aromas of cinnamon, dried apple, honey and dried apricots, with notes of caramelized brown sugar in behind; the palate begins with an arresting kick of acidity, giving way to big, unctuous flavours of pear preserve and baked apple and a luscious marmalade/allspice finish; a crisp seam of acidity brings lustre and shine throughout
